Jan’s fabulous spinach salad recipe

Here it is everybody:
 
2 lbs spinach, stemmed and torn in pieces
1.5 lbs mushrooms, sliced
6 hard cooked eggs, sliced
1/2 cup freshly grated parmesan cheese (not the canned stuff)
1 lb. bacon, cooked crisp & crumbled
 
Dressing:
 
1 cup mayo
1 small onion, finely grated
1/4 cup vegetable oil
1/4 cup red wine vinegar
3 T sugar
1 T dijon mustard
salt & pepper to taste
 
Combine salad ingredients in large bowl and toss with dressing just before serving.
Dressing can be made ahead
 
Hope you enjoy this as much as everyone else I know does! This is from Jan’s famous cookbook. I’ve tried to convince her to sell it online — I don’t know how many copies of it have been requested. Let me know how you like this recipe.

Pot Roast with Vegetables Recipe : Tyler Florence : Food Network

Cooking this today for my grandbabies — uh, well, actually their parents. Can’t wait. I can smell it just reading the recipe!

Easy Tasty Chicken Recipe

1 lb of chicken tenders
6 tbls butter (divided)
1 cup of rice uncooked
1 pkg sliced mushrooms
1 bunch of green onions (whites chopped)
3 cups of chicken broth
basil
shredded cheese
 
Melt 4 tbls of butter in large pan. Cook chicken in butter until done. Remove and keep warm. Melt remaining 2 tbls butter and add rice. Stir until covered in butter. Add green onions and mushrooms. Cook and stir until mushrooms are tender. Add chicken broth and basil. Bring to boil and cover. Reduce heat and simmer 20 minutes or until broth is absorbed. Add chicken and combine. Sprinkle ( or cover) top with cheese and serve.
